Ingredients:
- 1 cup oat milk
- 1 2oz Gerber® Butternut Squash puree
- 2 eggs
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 ½ cups oat flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp pumpkin pie spice (or cinnamon)
- 2 tbsp avocado oil or butter
Steps:
- In a medium mixing bowl, whisk the wet ingredients (oat milk through vanilla extract) until combined. Set aside.
- In a large mixing bowl, whisk together the dry ingredients (oat flour through pumpkin pie spice). Create a well in the middle and add the wet ingredients. Mix until just combined. Don’t worry about lumps - these will help the pancakes be fluffier.
- Preheat a skillet over medium heat and add the avocado oil or butter. Add ⅓ cup of batter per pancake and cook for about 2 minutes. Flip and cook for another minute and remove from heat.
- Cut the pancakes into pieces appropriate for your little one’s age and stage, then serve and enjoy!

1 cup heavy whipping cream
⅓ cup sweetened condensed milk
2 tsp vanilla extract
1 2oz tub of Gerber(R) 2nd Foods pumpkin
2 tsp pumpkin pie spice, plus more for topping
1 cup cold brew coffee
1 tbsp of your favorite pumpkin spice creamer - we used Starbucks® Pumpkin Spice creamer
Steps:
- In a large bowl, whisk together the heavy whipping cream, sweetened condensed milk, vanilla extract, Gerber pumpkin puree, and pumpkin pie spice until a thick foam forms. You can also use a food processor, blender, or stand mixer if you prefer. You’ll know it’s ready when you lift your whisk out of the cold foam and stiff peaks form that hold their shape.
- In a large bowl, mix together the Gerber Grain & Grow cereal, baking powder, and spice until completely combined. Add the Gerber puree, egg and vanilla extract, and stir until the mixture is evenly combined.
- Drop 1 tbsp portions of the cookie mixture onto the lined baking sheet and press down with the back of a spoon to flatten. Bake for 10-12 minutes, checking regularly to avoid burning. If the cookies still appear soft, cook them for another 2 minutes.
- Allow cookies to cool entirely on a wire rack. Make sure to cut the cookies to your little one’s age and stage before serving. Store leftovers in an airtight container for 2 days, or freeze for up to 2 weeks.
