One-Pot Butternut Squash Mac & Cheese

Sometimes you just need an easy meal at the end of a long day. This mac & cheese recipe - created just for parents! - is simple to make and uses butternut squash baby puree to add delicious, sweet winter squash flavors that combine perfectly with the creaminess of the cheese. Top with dried thyme and pepper and relax, you deserve it!

Recipe:

Serving size: 1-1/8 cup

Ingredients :

  • 1 8oz box whole wheat pasta

  • 3 cups milk of choice

  • 1 tbsp butter

  • ½ tsp garlic powder

  • ½ tsp dried thyme, plus more for topping

  • ½ tsp smoked paprika

  • ⅛ tsp salt

  • 2 2oz packs Gerber Butternut Squash Puree 

  • 1 tbsp cream cheese

  • ½ cup shredded cheddar cheese

  • ½ cup shredded parmesan cheese

  • Pepper, to taste

 

Steps:

  1. In a saucepan, add the pasta, milk, butter, and spices. Bring to a boil, then cover and reduce heat to low. Cook on low for 20 minutes, stirring regularly. If at any point the noodles look dry, add another splash of milk or water.
  2. After 20 minutes, add the cream cheese and butternut squash puree and gently mix. Remove from heat and add the cheddar and parmesan cheeses. Let sit for a few minutes before serving. Top with dried thyme and pepper and serve.
