

The whole family will love these apple cinnamon mini muffins! Enjoy them on a chilly morning or at snack time by the fire. Make sure to cut into smaller pieces depending on your little one’s age and stage.

Makes 24 mini muffins
Serving size: 1 muffin (cut in half)

Ingredients:

1 cup whole wheat flour

1 tsp cinnamon

1 tsp baking powder

⅛ tsp salt

1 cup milk of choice

1 large egg

1 tsp vanilla extract

¼ cup melted unsalted butter
Steps:

Preheat oven to 375 degrees. Grease a mini muffin pan, or line with liners.

In a medium bowl, whisk together the flour, Gerber Oatmeal Cereal, cinnamon, baking powder, and salt. In another medium bowl, mix together the Gerber Apple puree, milk, egg, vanilla extract, and melted butter.

Slowly add the dry ingredients to the wet ingredients, mixing until just combined.

Add the dough to the mini muffin pan, filling each cup to the top.

Bake for 15-17 minutes. Test one of the muffins for doneness by sticking in a toothpick and seeing if it comes out clean. Cool completely.

Cut into portions appropriate for your baby’s age and serve. Store leftovers in an airtight container in the fridge for up to 5 days. Freeze in an airtight container for up to one month.
